Salmon and Avocado Tartra

Light, refreshing dish which makes every meal colorful and interesting.

 

Ingredients for 4 diners:

 

For the salmon tartar:

250gr fresh salmon cut into 1X1 cm cubes

2 green onion stalks cut into rings

10-12 whole cilantro leaves

1 teaspoon toasted black/ white sesame

Red chili pepper cut into rings

 

The vinaigrette:

Juice from ½ lemon

½ fresh grated ginger

½ teaspoon sesame oil

½ teaspoon honey

1 spoon soy

Salt and pepper to taste

 

The avocado cream:

2 ripe avocados

Juice from ½ lemon

Salt and pepper to taste

A bit of chipotle pepper rings

 

Preparation:

 

The avocado cream:

Peel avocado and crush with a fork until smooth cream.

Season and put aside.

 

The vinaigrette:

Mix well all ingredients until smooth.

 

The tartar:

Mix salmon cubes and the rest of the ingredients with the vinaigrette.

Serving the dish:

Spread avocado cream on a plate, put salmon cubes on top and garnish with cilantro leaves, chili and sesame.

 

*can be served with 4 individual plates or one big sharing plate.
