Pad Li

Ingredients for 4 diners:

 

• ½ kg ground lamb meat

• 1 finely chopped medium onion

• Finely chopped ½ carrot

• Finely chopped ½ celery stalk

• 3 garlic cloves

• 1 spoon 5 spice mix

• 1 ½ cups chicken broth

• 3 spoons soy oil

• 3 spoons soy

• 1 teaspoon black pepper

• 1 spoon green curry paste

• 3 spoons tomato paste

• ½ cup coconut milk

• 15 mint leaves

• 15 basil leaves

• 1 spoon chopped green onion

• Salt to taste

 

Preparation:

 

Fry oil with vegetables, onion, celery and carrot in a pot for 10 minutes over medium flame, add 2 garlic cloves and fry for 2 more minutes, add ground meat and fry for 2 more minutes until all liquids has steamed, add broth, soy, coconut milk, tomato paste, curry paste and black pepper and cook for 20 minutes while stirring.

Add all leaves, stir for a minute and serve.

It is recommended to serve on a bed of rice or sauté with rice noodles and garnish with cilantro leaves.
