Coby Curry

Festive, spicy, beautiful dish which will make you want more and more…

 

Ingredients for 4 diners:

• 1kg pullet meat, cleaned and divided into 3 parts

• 2 celery sticks/ stalks

• 1 cubed white onion

• 5 garlic cloves

• 2 spoons grated ginger

• 4 spoons prime red curry paste

• 100gr tomato paste

• 3 kaffir lime leaves from specialty stores (can be replaced with lemon juice)

• ½ cup prime coconut milk (17% fat at least)

• 1 cup prime chicken broth or water

• 150gr poached green beans

• 2 red pepper cut into small cubes

• Salt to taste

• 8 spoon sunflower oil

 

Preparation:

Salt and roast pullet until golden and put in a separate bowl. Fry garlic, ginger, celery and onion with the pullet’s leftover oil for 5 minutes and be careful not to burn the garlic. Add red curry, paste and fry for 2 more minutes, then add chicken broth and coconut milk, stir well, boil and lower the flame.

Garnish: chopped cilantro.
